Apple Dunkin’s

My family and I went apple picking one day and ended up with so many apples!  I was trying to think of all the different ways we could eat and enjoy these without breaking our restrictive diet and not feeling all appled out.  These turned out so good I had to share them with you!  And if you are lookin for something sweet then come no further!  This yummy desert can be a great way to finish off the meal and you won’t feel all that bad eating it either!  It’s light, it’s snacky and super fun for the kids!  Enjoy!

Ingredients:

Coconut Oil in your deep fryer

1 cup tapioca powder (divided in half)

12 Tablespoons water (divided in half)

2/3 Cup Coconut Flour

1 Tablespoon Cinnamon

1/2 Cup Coconut Sugar

1-2 apples peeled, cored and sliced

100% Pure Maple Syrup

 

Directions:

  1. Set your deep fryer to 350 degrees with your coconut oil in it.
  2. In a wide bowl or dish place 1/2 cup of Tapioca Powder and 6 Tbsp. Water.  Wisk together real good until it is no longer thick, but runny and smooth.  In another bowl mix together the reserved water and tapioca flour and set aside to add in later when needed.
  3. In a separate wide bowl or dish mix together the Coconut Flour, Cinnamon and Coconut Sugar.
  4. Dip your apple slices into the wet mixture and be sure to coat both sides.  Next dip it into the dry mixture, again coating both sides well.  Repeat and double coat the apple slice by placing it back into the wet mixture then again back into the dry mixture.  Coating both sides carefully so you don’t rub off any of the coating.
  5. Gently lay down the coated apple slice into the deep fryer.  Fry until golden brown and floating fully almost all the way out of the oil. Scoop out and place on a paper towel or a baking rack to cool and drip off any excess oil.
  6. Repeat with each apple slice. Add the rest of the reserved mixture when your wet mixture runs low.
  7. Serve slightly warm and drizzled with Maple Syrup.
