Hungry Healthy Momma’s Stir Fry

This is an awesome recipe for a great healthy meal.  Full of healthy veggies.  All the ingredients I use are Organic.  The taste just can’t compare to non organic.  I find that the use of salt and pepper over stir fry and rice makes a great substitute for soy sauce.

Ingredients:

2 Tablespoon Coconut Oil

1 Cup Broccoli

1/2 Cup White Onion, chopped

1/2 Cup Mushrooms, chopped

1 Cup Bok Choy, chopped, separating greens from stalks

1 Cup Green Cabbage, chopped

Himalayan Salt To Taste

Fresh Ground Pepper To Taste

Fennel Seeds To Taste

7oz of Ground Beef

2 Cups Cooked Jasmine Rice

 

Directions:

  1. In a Medium Cast Iron Skillet and a Large Cast Iron Skillet melt 1 Tablespoon Coconut Oil in each skillet on Medium Heat.
  2. Place The ground beef in the medium skillet and cook on Medium heat until no longer pink.  Stir and chop frequently to crumble. When done remove pan from heat and set aside.
  3. In the Large Skillet, on Medium Heat place the onions and stalk of the Bok Choy.  Stiring frequently to prevent burning.
  4. When onions and Bok Choy have softened a little bit add in Broccoli, Cabbage and Mushrooms, Salt, Pepper, and Fennel Seeds. Stir and cook until Broccoli is Soft and Tender then add in the Bok Choy Leaves and Beef set aside.  Continue Cooking on Medium Heat and stirring occasionally for 2-5 more minuets or until done.
  5. Scoop half of the vegetable and beef mixture over 1 cup of Jasmine Rice, sprinkle on any extra salt and pepper as desired and serve.
